Step by step

  1. Add cold water, powder-fine coffee (and sugar if using) to the cezve and stir once.
  2. Heat slowly on low — don’t stir again.
  3. As the foam rises, pull off before it boils and spoon foam into the cups.
  4. Return briefly for a second rise, then pour and let the grounds settle.
Tip: The grind must be powder-fine. Never let it boil over — the foam on top is the prize.
